Spell check

The solution to Stuart's problem is to select another language, then
reselect the language you want...
Nothing in Windows Mail is likely to be "fixed", as it has been replaced
with Windows Live Mail.

I had the same problem
 
In the main screen of Windows Mail, (not the compose screen), go to
Tools, Options, Spelling.
First select another language, click Apply. Then reselect English and click OK.

I was looking at the header of the email itself, just like you said. Once I
checked the main header for email, I was able to correct the problem. Thanks
to Nilinx!!!!
