International Curry
4 Japanese eggplants (not peeled)
12 Chinese Long Bean, cut into half inch size pieces
1/2 Yellow onion, chopped
1/2 c Chicken broth
1c Coconut milk
2 tb Curry powder (mild, med, or hot - to taste)
1 t Garam Masala powder
1 ts Coriander powder
2 ts Ginger, chopped
3 clov Garlic, mashed
oil, salt, pepper
Toast coriander slightly in hot pan
Add about 1tb oil, garlic, onion and long bean
Saute over med high heat for 3-4 minutes, stirring often
Add eggplant, and another tb oil, saute another 3-4 minutes, stirring
Add spices, mix thoroughly,
Add chicken broth, and reduce to simmer
Simmer 5-6 minutes, then add coconut milk. Simmer another 5 minutes.
The eggplant will almost disintegrate, except for the skin.
