2 Contact Books - how do I erase the right one?

I seem to have two Contact address books.

When I start a new e-mail - and click on the 'To...' button - I am giv
the option of looking at two 'Contact' address books.

One is old - and full of wrong e-mail addresses.

The other is new.

How can I get rid of the old one when they are both named 'Contacts'?

You didn't post your Outlook version.
In some, you would remove the duplicate reference here:
Tools > E-mail accounts > View or change existing directories or address
books > Outlook Address Book > Change.
