I am watching task manager which is on my toolbar near the clock and I see
the cpu utilization go up to 100% but by the time I display all the
processes I can not determine which process was using most of the cpu.

If there any utility to display a history of performation and which
applications was using it?

Thanks

Launch Task Manager and go to the Processes tab.

Click twice on the CPU column header. That will sort the list of
processes into descending order based on CPU usage, with the highest
CPU usage items at the top.

Disregard the value shown for "System Idle Process". That is just a
filler entry to account for the time that the CPU has nothing to do.

Good luck
