XP profile question

I'm trying to set access levels to two other profiles for my kids. When I right click and go to properties on different apps (while in Admin mode), I only see "Owner" as a choice. I'd each profile (Kid1, Kid2,...) to have access only to the apps I want them to use. Is this something I can do with XP.

Yes, all this is possible (however not all applications completely
designed for this segregation by user ... your mileage will vary).

However the first step for you may be to read the articles in "Help"
entitled "System Administration". Learn about how you setup short-cuts
to applications in each kid's private "profile". Learn about
permissions. Learn about "All Users", "Default", and "individual" profiles.
