To the first question, a qualified yes. It depends on the conversion
software that is supplied with the scanner.
To the second question, why not just convert the *.doc file directly
into a *.pdf file electronically, without scanning? It can be done using
Adobe Acrobat or one the few shareware/freeware conversion applications.

I'm not sure if I completely understand your question, but could
PRIMO PDF (http://www.primopdf.com/) be the answer?
Sorry I thought the subject title explained. The only scanner
software I have is the built in windows scanner & software which
does not offer pdf as a scan format.
