I have a system with winXP embedded already installed. Now I need to install
software for my company but it requires Internet Information Services.

But I dont know how to install it. In winXP embedded the Add/Remove Windows
Components button is disabled so I cant install it from there. I searched for
a solution but couldn't find it.

How can I install IIS on winXP embedded??

99% likely, you'll have to talk to the vendor who created the XPE image for
the system you're using. Even if you could add the bits for IIS, they will
have dependancies (DLLs, etc.) that may or may not be part of your image.
Talk to your vendor and ask them to provide an image with IIS added in.

XPE systems are rarely configured to allow ad-hoc addition of major system
components like that.
