Does anyone know any software that will count frequency of a given
word, for example count the frequency of "hello" in a text ?

Textstat 3.0 from http://www.lunerouge.org/gnu/textstat_f.htm (site in
french, search for the zipfile halfway the page) gives a lot of statistics
about textdocuments, including an alfabetic list of all words used and the
number of times they are used.
