2 Part Question
Did microsoft release a new cd (win xp pro)with all the
updates / service packs and if so how can i get one
How do i know what version xp pro I recieved. I see so
many on the support end (ie 64, 32...) and does the
instalation process select the best fit for you during
the process?

If you have to ask which version you have, you have the 32bit version of
Windows XP.
The 64bit is slightly more expensive, not for sale at your normal computer
store at this time and only runs on special hardware (64bit) that although
you COULD have, you would know you bought it.

Microsoft does not sell a CD with all of the SPs/updates on it that I know
of.. But you can download the updates yourself and keep them on a CD-RW (I
say CD-RW so you can update it without wasting another dime..)

SP1a

For all other patches/updates:

You can save a lot of time/space getting SP1a and then the SP1 rollup
package...
