What settings are saved for IE and OE??
Would Favorites and mail rules, address book be saved?

Most settings will be saved. A good guide for FAST (Files and Settings
Transfer wizard) can be found here:

Besides explaining the various options and describing how the tool works,
it discusses some of the caveats. Also covers some of the possible problems
that you might encounter and how to deal with those.
