Can someone point me to a good explanation of Windows security? I am
specifically interested in how individual users and user groups are given or
denied permission to access various folders on a network. Thanks.

Try an advanced search of Microsoft

A search for "security users groups permissions xp" comes up with many
articles that will start you on the path.
