When I e-mail someone, the word "work" appears in the "from" column. How do I
change that?

Go to tools menu>accounts>select your account>properties>general tab, change
the name line>apply>ok.
 
In Windows Mail go to Tools, Accounts, select that mail account,
click Properties. On the General tab, under User Information, change
the Name field to whatever you want your recipients to see, then click OK.
