the junk folder has a button to mark "not junk"

Is it possible to add a "junk" button to the inbox toolbar and generally
modify the buttons on display?

The button for Junk was requested many times in the beta testing, but it was
not included.
To modify the toolbar right click on it and choose Customize. Select in left
pane-Add, position using up or down buttons.

Other modifications regarding what you can do with "Your" WM are on the view
menu> layout and current view.
On the Tools menu>options.

Thats why I asked. When I right click on the bar all I get is a list of
toolbars which I can tick and untick.

No customise or in fact any other option at all.

Customize should be below the list of toolbars?

Try this route:
View menu>layout>customize toolbar.
