Q1. Is there any way to control which headers are printed when printing an
e-mail? Ideally I'd like to print no headers on some e-mails.

Q2. Is there any way to automagically delete emails which were received
more than 30, 60, 90 days ago? Ideally I'd like to be able to specify an
expiry period on a folder by folder basis. Sent messages - keep for 90
days; received messages keep for 120 days; some other folder never delete,
etc.

No to both. For #2, you can set up message rules, or you can use Edit |
Find to delete within a certain date range.
