Win2003 act as a router, question

I have three network cards on my win2k3 server, and I want to set it up as a
router for my workstations. If I enable LAN routing on the routing&remote
access config, then it seems to enable this by default, but how do I setup
this router so that it can forwad internet requests on to my internet
router - which is a separate device on my network with its own IP..
 
You simply make the Internet NAT Device the Default Gateway of the LAN
Router machine, assuming it has a direct unrouted path to the NAT Device.

All other machines on the LAN use the LAN Router as the Default Gateway,
also assuming they have a direct unrouted path to it.

"Unrouted path" simply means that both ends are in the same subnet.
