Why does Outlook start every line with a Capital Letter

Which version of outlook and which editor? It's done by autocorrect - see
tools, options, spelling if you use Outlook's editor, or Word's autocorrect
options if you use the word editor.

Also - you can undo corrections using Ctrl-Z immediately after the change is
made.
