I have been using Outlook 2007 for some time now with Gmail and POP.
I decieded to switch to IMAP and although it said send and receive
went fine I coudn't find my new messages. Then I discovered a
new .pst file and listing in my folder structure for Gmail IMAP. Why
did it do this and how can I get the mail to start coming back into my
inbox?

Outlook aggregates all POP and Exchange accounts into one message store
(.pst file). Each HTTP and IMAP account gets its own message store.

If you want your e-mail aggregated under one message store again, switch
Gmail back to using POP (and change to a POP account in Outlook for
Gmail).
