Why can't I add an e-mail address to contacts

As a home user, without Exchange Server, is it possible to add an e-mail
address to a contact, so that when I want to e-mail someone I can just select
them from a list.

Everytime I type their address in the e-mail field, it disappeares when I
click in a different field.

Why do you keep posting the same question?
Just R click the email address and select "Add to Contacts" from the Context
menu.
 
Thanks it wasn't allowing me to enter anything in the e-mail field, I worked
out that if I removed "Microsoft Exchange Server" from "Data File Management"
it then allows you to manage e-mail addresses locally
