How do I set up a whitelist so all the e-mails from my friends don't end up
in my spam filter?

Hardly ever necessary. What spam filter do you use that blacklists
legitimate addresses?

I use the spam filter that comes with my Outlook 2003
Some of my e-mails from my friends end up in the junk e-mail file while
others from the same person go through just fine.
It's a pain to have to go through the junk e-mail to see if something that
came from my friend is in there.
I thought if I whitelisted them, all their e-mails would go through but I
can't find how to set it up in the help menu.

Outlook doesn't really have a spam filter. If you are talking about it's
Junk Mail feature, you can easily tweak it with the Outlook the Safe
Sender's list.
