I know the basics but I really want to learn more about how it works. Can
someone direct me to an online site or book that is easy to understand and
explains things step by step?

The microsoft website for excel is a good place to start:

I learned a lot from the missing manual book

Also there are guides to the key functionality of excel in the help
files (beyond command help and they link to guides on the web).
