Where does all the ink go when I do a Deep Head cleaning?

It depends on the printer.
Either into a service station (HP).
Or waste ink pads (Epson and Canon and some HP).
Or with some new models back into the cartridge (HP).
Different makes produce different amounts of waste ink, the "head in cartridge"
models tend to produce less waste ink.

Typically into a little tray fitted with a sponge.

Eventually it fills up. What happens next depends on the printer. Options
include...

a) A nice warning message.
b) A nice warning message and it stops working.
c) leaks ink all over the place.

Typically most of the ink turns into a paste and only the new ink leaks. My
HP895cxi lasted about 6 years before it filled up and started leaking. I was
lucky and was able to take the printer apart and scoop out the solidified
ink with a plastic spoon. Really messy job but it should be ok for another
4-5 years.

Or before it reaches that state, clean the collecting material, or better
yet, extend the drain hose to an exterior collecting device.
