when typing an email in Outlook, the cursor jumps at random to another part
of the body text where you continue to type until you realise the problem ....

Are you using a laptop and might you accidentally tapping the touch pad with
your thumb as you type?
 
I have the same problem, and use an external mouse plus have set the touchpad
sensitivity to require tapping hard.
I'm new to Win 7 & Outlook 2007 but think the problem here is the new
mouse/select features that I haven't done the tutorial on--click & drag works
differently and I suspect other mouse issues are affected as well (?).
sometimes my mouse wanders and typing will appear wherever the pointer has
strayed to...annoying!
