How many copies a week do you feel is the limit for stepping up?

A) from a 2-cartridge system to a 4-cart?

B) amount of photo prints a week from a 4-color system to a 5 or 6-color
system?

The reason to go from a four ink system to a five, six (or seven or eight)
color system is related to how happy you are with the print quality. All else
being equal (and it never is), more inks will result in better color
graduations, particularly in light areas such as sky or face prints. In HP's
case the six (or seven or eight) color printing also provides better
lightfastness than four ink printing.
