What happens to Imap emails when the server is changed?

I am currently using Outlook 2007 and I am using imap to get my emails on my
blackberry. We are changing our server provider. What will happen to the
emails in Outlook once our old account is deleted? Will I still have access
ti sent, deleted and other folder items? I have been searching for an answer
to this for about 3 months now and no one has been able to help me. All of
the tech people we know use Apple.
What I want to do is be able to access all the emails I have been sending
and recieving when I get the new server set up.
 
As a precaution, I would copy the messages to a pst. This insures you have
the full messages, not just headers. When you reconnect the account to the
new server, it is likely to clean out the existing folders and refresh with
the new server. You can backup the pst the account uses (and open it using
file open), but I would still back up everything to a new pst to insure you
have full messages.
