What all can be Monitored by Administrator? How to Overcome this?

Hi,
I'm in an LAN(Office), using Win XP SP2, I dont know what Server is Running,
But I want to know What all can be Monitored from the Server, Is there any
possibility to Monitor the My Screen also, if so How to prevent It, How to
Bypass Proxy to connect to Internet.
1. What all can be done by the Administrator to Monitor?
2. How to over come this?

The Administrator is all knowing/all seeing.
 
Just about everything can be monitored from the server.
Any actions you take to bypass or defeat can and should compromise your
employment.

If you are unwilling to have your employer monitor the use of the companies
own equipment, perhaps you should seek other employment or open your own
business.

Amen. The computer there at work is not your computer, the data does not
belong to you, and your time has been purchased by the company. On top of
this the bandwidth you're using doesn't belong to you either. Adhere to the
rules or join the unemployment lines or, alternatively, start a company of
your own and see why you might be monitored. Spyware is essential in two
instances, at work and in the home when you have kids using your PC.
