I understand the concept on how to use these two functions, but I do not understand why you would write a formula for results that you can see on the data table? What am I not getting?

Well, think the 2 lookups (vlookup, hlookup) does
enable an "automatic" way for one to look-up
& pluck out relevant data from the "data table"
corresponding to values in another column for viewing,
or for further use in downstream calculations.

The look-up tables could also be huge and you may also
be having to look-up a large number of values repetitiously
(e.g.: look-up 50,000 values placed in A2:A50001)

It would be *mind boggling* to have to do this manually,
in an error free manner, and in a couple of seconds <g>!
