I have a legit copy of Vista RC2 from MS...can this ver.[RC2] be updated to
RTM [Business ver.]?

It looks like it the OP wants to do an Ultimate to Business upgrade and that
is not possible.

Can't we just stick in the Vista RC2 install DVD when the Vista
Upgrade installer says it can't find a previous version? We were
able to install XP Upgrade clean that way...
Will it be the same with Vista?

Why one would want to do it, I don't know...other than to save one's
user files and settings, and a little (or a lot) of money on an OS.
I never tried the Vista Files and Settings Transfer Wizard, since my
user files are more extensive than the size of a Dual-layer DVD, so I
just manually back up my files to an external drive.
Is there by chance a way to backup one's user files from his HD to an
external drive from within the Vista installer?
