After I download the new updates for Defender and then open Defender for the
new scan, I notice that the page states: "Last Scan Not Available." Is there
any way I can see, at least, previous scan date?

I do the updates manually and I have CCleaner. However, I have unchecked
Defender in the CCleaner 'Applications."

Nope. The log has been erased.

Make sure Windows Disk Cleanup is not set to delete the logs as well.

Untick the option to delete Vista's logs, if one is present in the list.

Where would I look to see if that is "ticked?"

If you do not have this option, you do not have to worry about the logs
getting erased. You will need a third party tool, like you use, to manage
them.
