Using From field in outlook 2007 with mail merge

I am desperately trying to send out emails via mail merge and be able to
customize my outlook "From" field before sending. However, I never get a
chance to make any edits via outlook before the messages are sent from the
Word mail merge. Please advise.

As far as I can tell, Outlook's mail merge doesn't allow selecting the sending
address.
