First, look here for all the information you need on backup and restoration
of Outlook data:

When you have Outlook 2003 installed on the new machine, it will create a
new .PST file, and this file will use the new Unicode format. Once your old
..PST file is copied to the new machine and you've made sure it's not marked
read-only, use File | Open | Outlook Data File to open your old .PST file
next to the new one in the Folder List (click the Folder List button in
Outlook 2003's new Navigation Pane to make sure you're seeing all the
available folders).
Copy data between the two .PST files by drag and drop. For default folders
such as the Inbox, you'll need to copy just the items inside the folder,
rather than the folder itself. Switch to an unfiltered table view of the
folder in your old .PST, such as By Category, select all items (CTRL+A), and
drag them to the corresponding folder in the new .PST file. For
user-created folders, it's OK to simply copy the entire folder.
When you're finished with your old .PST file, you can close it out of
Outlook -- right-click on it and choose Close.
