When I go into "Add/Remove programs" to try and uninstall
xp pro, I do not see one clear program to uninstall, the
first one is called Windows XP Application Compatability
Update, followed by a bunch of Windows XP Hotfix programs,
does anyone know which of these programs I should remove
to uninstall Windows XP Pro?
Thank you!

If you chose to do a new install rather than an upgrade, then your previous
operating system files are gone. If you want to go back to Windows 98 or,
any version that only uses FAT32 formatting, and you chose to format NTFS
when you upgraded, then you'll have to boot with a Windows 98 Startup disk
and do an fdisk to remove the NTFS, then format C: (so the hard drive will
be formatted FAT32). If you don't have a Windows 98 bootdisk (Startup disk)
you can download at one at:

Back up your hard drive on any media like cd or zip disks
or may be external hard drive and reinstall whatever
operating system you want on your computer. You can then
put the stored media back onto the formatted hard drive.
You can never unistall an operating system staying in it.

Brian,
Unless you upgraded from a previous version of Windows and elected not to
use NTFS; did not convert from FAT/FAT32 to NTFS; added another hard drive
or storage device; used third party partitioning software to change the
hard drive configuration; or made any changes to the original hard drive
configuration; there will not be an option to uninstall XP. The uninstall
option is automatically deleted when a system configuration is made that
would make the uninstall back to the previous OS subject to data loss or
impossible execute. If you upgraded an made no changes; the option to
uninstall back to the OS you upgraded should be a success.

None of them. You don't necessarily have that option. It's only
there if

1. you upgraded from a previous version

2. you chose the option to save the previous version's files

3. your drive is not NTFS.

If all of the above three things aren't true, and you want to
revert to an older operating system, your only option is to
reformat and install it cleanly.
