Can anyone provide some enlightenment on the Uber BIOS I see mentioned in
the threads occasionally.

What is it and why would it be better than an Asus BIOS ?

The Uber BIOS enables multiple features that ASUS locks when shipping their
motherboards from the factory. For example, you can now control your
chipset voltages and RAM voltages go up to 2.9V. Before the Uber, the
chipset voltages weren't even available to you.
Here's a complete list of everything Uber enables:

Legacy Diskette

CHIP Voltage Control
OnChip IDE Channel
Primary Master
Primary Slave

IDE Prefetch Mode
IDE HDD Block Mode
ACPI function
Power Management
HDD Power Down
Reset Configuration
MPS Version Control
Small Logo(EPA)
Machine MAC(NV)
MAC(NV) Address
KB Power ON Pass
Hot Key Power ON
UR2 Duplex Mode

This BIOS is only for rev 2.0 or later motherboards. Installing the
Uber is the same procedure you use to install any other Award BIOS.

My understanding is that the chipset voltage (northbridge) is still
not settable using the Uber bios. I mean you can set it but nothing
happens. It isn't enabled in the hardware. So, as far as I can tell,
the only advantage is being able to set the memory voltage at 2.9
while 2.8 is the maxiumum for the standard bios. That will likely help
for reaching some overclocking speeds depending on your memory. But it
will also likely void the warranty on the memory. Mine (Mushkin Level
3500) is voided over 2.75. But it does run at 2.8 just fine.
