I want a default email address but be able to choose second address

What version of Outlook? The menus are different for different versions. I
do what you describe all the time.

When composing new e-mail, isn't there a From entry under the View menu
to let you show that field? You can then click on From or manually
specify the e-mail address. However, I suspect the recipient will see
something like "joe schmoe on behalf of jane doe" so you will still be
identified as the sender. Alternatively, just define more than one
e-mail account, each with different Name and/or E-mail values and pick
which account you want to use when sending the e-mail using the Accounts
toolbar button (available in OL2002 - you didn't mention YOUR version).
