I've managed to accidentally install a second copy of Windows 2000 on
my hard drive. Is there a way to uninstall the copy I am not using?
Thanks.

Yes. Simply erase the system directory and all subdirectories of the sys
you don't want.

If a boot menu continues to appear, read up on the "boot.ini" file, and
edit that file appropriately. However, the boot menu won't hurt anything
and you can change its timeout to 0 to make it non-displayed.

By the way, a second working copy of W2k can be a godsend when the prime
copy goes sour, as happens. If there's no really compelling reason for
getting rid of it, like needing disk space for other things, you might
rethink the matter. You can still disable that boot menu.
