I don't believe there is one, however most software vendors will state in their support documentation (on their website) whether or not it has bee tested on Terminal Server. "Most" modern 32 bit applications work in a terminal services environment with little or no modifications
Most of us have had to deal with losts of off the wall programs so let us know what you're interested in running on TS and there's a decent chance we've dealt with it before
DOS programs will NOT function is full screen mode, although there are font changes you can make to have it look "full screen". DOS programs are also famous for thrashing CPU's on NT based OS, however it's more pronounced in terminal services because there could be multiple people using the DOS program which can totally peg the CPU's w/o use of a program to control home much CPU time it gets
