I recently had a bout with some spyware, and it loaded
some options onto my computer that I don't want.

Mainly, in IE if I right click on the toolbar it gives me
a run down of possible tool bars to displ, the usuals are
there along with some Adult sites and Casinos etc.

How can I delete these from even being an option?

First eliminate any scumware.

Note that AdAware and SpyBot S & D will each catch some things the other
won't. Also, each need to be updated before every use, even when just
downloaded.
