Is there a way in Outlook 2007 to always have the person's name and email
address display on the To: field?

Some of my contacts display with both the name and email in <> and some do
not.

When composing a message you mean?
For addresses that you have typed and resolved via your Address Book, the
display name for that address as you have configured it in your Contacts
folder is used. For cached addresses (for instance upon replying),
AutoSuggest uses the display name as configured by the sender.
 
When I am composing a message, and start to type a name in the To: field,
Outlook will pick up the names of contacts and it displays both the name and
email address. But when I click to choose the contact, only the name shows
for some and others will show both their name and email info.

I would like to have both the name and email displayed for everyone.

Also, when I send an email out to one of my contacts folder and click on the
plus sign to expand all the names, I would like that to also show name and
email address.

I thought maybe there was an option somewhere to set this in 2007.

So there is no way I can manually set this? Unless I specifically go into
the contacts folder and change the display name to their name and email?
