Time lapse performance monitoring

Is there a way to monitor my 2000 servers performance over a period of say 2
weeks and then save the data to a log to be graphed. Thanks!
 
There may be, but I am not aware of anything.

Have you checked out the logging features of the Windows 2000 Server
Performance tool? It looks like exactly what you need. Should be in
Administrative Tools, expand the plus sign next to "Performance Logs and
Alerts" to see a sample logging setup.
