Text looks weird in PowerPoint

How come sometimes in my 2007 files the text look really smooth and
clear (like with headers and bullets) but other times the text looks
choppy and kind of bit-mappy? A good example is that I have these two
slides that have the exact same header, just the content of the slide
underneath the header changes. The header looks good/normal/smooth on
the first slide, then advance to the next slide and it looks choppy
and sort of frazzled around the edges.

I think a trend I am notcing is that this problem with the header text
only happens on slides where there is some animation (but the text
itself is not animated, it just happens to be on a slide with
something else animated).

Any ideas?

I suggest you try enabling 'Hardware Acceleration'.
(Slide Show>Set Up how>Check/Uncheck Enable Hardware Acceleration)

thanks, I already have/had "Use hardware graphics acceleration"
checked off.

Can you tell us what type of faces these are -- i.e. are they TrueType,
OpenType, or Adobe Type 1 fonts? If you know, tell us for the type that
looks good and for the type that degrades.
