text box and it's bound label

How do I change the default spacing between these two items (they are too
far apart).

Also, is there any way to 'unbind' them short of flat out deleting the
label?

I am not aware of a setting for the "default" spacing between them.

The way to "disconnect" them is to click on the label, use Ctrl+x, click on
the background of the form section (do not click on the textbox itself), and
then paste the label back on the form with Ctrl+v.

In design view, click on the textbox tool on the toolbox. Before clicking
on your form, open the properties window. You can set the spacing by
changing the Label X property.

This change will be in effect for the Access session. If you want to always
have this, you can create a form that has the characteristics you like and
set this form as your 'template' in Tools, Options, Forms/Reports.

You can select the label, and use cut (ctrl-x), then click anywhere on the
form and paste (ctrl-v) to detach it from the textbox. Note you can also
set this in the properties, (as above) to not include a label with a
textbox.
