Tasks | Status field - Can I add items?

For Task items, can I add an item to the list of ~5 items in the Status
field {Done, Not Started, In progress, Waiting on someone else, etc}?

Alternatively, can I create a custom field that can only accept values
from a list of pre-specified entries, so that I may replicate Status's
functionality?

Yes, but since you can't customize the first page of a task form, this is
not a trivial substitution.
