Using Word 2007, I have created a Table of Contents and some of the text is
quite long and is too close to the page number. If there a way in Word 07
that it will automatically wrap the text to the next line without me trying
to change the margins and tabs manually to achieve this

You need to add a right indent to the TOC style. The easiest way to do this
without disturbing the tab stop is to right-click in one of the TOC entries,
choose Paragraph, set a right indent amount (at least 0.5"), and click OK.
Because TOC styles are set to update automatically, this change in one entry
will be propagated to the style itself. If you have several levels in the
TOC, you'll need to do this in one entry at each level. The text will wrap
at the indent, but the page number will still be at the tab stop.
