Why would I need this running on drives other than C: ?
Other drives are data only.

Do I need system restore on them?

No. System restore does not work on data anyway.

It can sometimes be useful for recovering accidentally deleted files, but I
prefer relying on my own backups.

It's a good thing you do, because System Restore doesn't restore
"accidentally deleted files" unless they happen to be critical ones
like the Registry -- which would probably prevent you from booting
anyway.

No reason I can imagine, unless you've installed Windows on a
different drive. And you told us it's on C.

It's just another silly default.

yep.

Having system restore on drives other than C:
is not necessary...
I've even seen it cause system restore to not even function
