Tools->Send and Receive Settings->Define Send/Receive Groups. Highlight
your Exchange Mailbox and click Edit. Mark the folders you want for offline
use (You HAVE already made offline folders available under Exchange
Properties, right?)
Check to perform a send/receive upon exit.
