switch user in Outlook 2007

I wonder how we can switch from one user to another if we have multiple
accounts.

If by "multiple accounts" you mean multiple PROFILES, then you have to exit
Outlook and re-start to change to a different profile.
If however by "multiple accounts" you mean multiple EMAIL accounts, then
when you compose a new message use the Accounts button to determine which
account the email is sent from.
