This is in the new Word 2007. How do I keep all the styles from showing on
the style toolbar? Can it be minimized some way to just a drop down?

I use Word 2007. There is no style toolbar. I assume you mean the Styles
group in the Home tab of the ribbon. All styles do not show until I press
the more button or I click the launch dialog button to show the Styles pane.
I looked through the options and saw no way to keep these things open.

This is called the Quick Style Gallery. You can customize the gallery to
show exactly which styles you need and this can be set as a global gallery
(displayed for all documents regardless of the template they are created
from) or can be customized on a template by template basis.

At its simplest level, simply right click on a Style in the gallery and
choose REMOVE FROM QUICK STYLE GALLERY.

I don't feel that this answered the question of how to minimize this
annoyingly large item on the toolbar. I really hate, hate, hate the Word
2007 toolbars as they take up too much of my screen. Why on earth do I need
these huge style gallery samples? how can I make everything smaller?

If you select and then double click a tab on the Ribbon, it will be
minimised so that just the tabs appear and subsequently single clicking on a
tab will expand the Ribbon so its contents are revealed. When the focus
moves back to the document, the Ribbon is once again minimised.
