Stop automatically adding them to my contact list when I email someone

Outlook 2000 Win XP Home

I just went through my 2400+ contact records one by one (after having
to use the 2GB crop tool) and reduced the number of contact records to
800+. In so doing, I noticed that many of the contact records were
somehow automatically added to my Contact folder whenever I either sent
(or possibly even received) email from someone. This contributed to
the bloating of my Contact folder. I do not want any contacts added to
my folder automatically. I only want them added if I specifically
create a new contact record for them. Does anyone know how to turn off
this auto-add feature?
 
It's been a while since I've seen the Outlook 2000 options dialog but i
think that option is here: Tools menu > Options > Email.

It was in that general area, specifically
Tools>Options>Preferences>Email Options>On replies and forwards. There
is a checkbox there for "Automatically put people I reply to in
[specify folder]". Curiously, I did not have a check in the checkbox,
but the Contacts folder was specified (although it was grayed out).
Perhaps at one time I had this box selected. That could explain why I
encountered these type of records in my Contact folder.
