IT is not chiseled in stone yet, but some mail server someday may not accept
mail from domains without and SPF record.
An SPF record is for the domain, it tells a mail server what servers and IP
addresses are authorized to send mail for the domain. This is supposed to
prevent someone from using a spoofed email address.

Your question is a leading one that takes a falsehood as its premise,
and is thus unanswerable. We *don't* "need" to set up SPF records for
mail servers.
 
I've already added my SPF records to win2k servers, right
click the domain name in the dns console and beneath the
new host, new... you will see other records like you would
for an srv record etc. Choose the TXT record. In there you
paste the text from the SPF wizard.

It isn't needed as has been pointed out, but in an effort to
add accountability, responsibility, traceability to servers
handling emails, this is a step thought to assist. It does
not take long to do [depending on how many domains u r
hosting ;-)] so why not, anything to reduce spam or make
it harder for spammy.

Actually, it is not going to do much to reduce spam until there is an SPF
record for every domain. An SPF record tells mail servers what MX servers
and IP addresses can be used to send mail from any given domain.

So (e-mail address removed) won't be able to send mail from (e-mail address removed) from his
own mail server, that is once hotmail.com has an SPF record.
That's the idea behind SPF anyway, I don't know that mail servers will be
required or even allowed to reject mail if there isn't an SPF record for the
sending domain, if it did happen it probably won't reduce spam, most spam is
under the guise of legitimate because you gave your email address to one web
site and you accepted the terms of the agreement.
As long as there are sellers out there willing to sell email addresses there
will be buyers for it. How many times have you got an offer for a CD
containing 6 million email addresses?
