sorting data and automatic graphs

i have a large amount of data that is an xy scatter. it is xy data that
pertains to many subjects. i need to make a graph for each subject. as of
now i make the first one and then cut and paste to a new one, use source data
and change the x and y data. this does take me a long time since i have alot
of subjects. is there another way to pick my data range and sort by subject
to make differenct graphs without cutting/pasting and constantly changes the
source data. i tried tinkering with a pivot table but everytime i changed the
table, all tables changed.
 
There may be depending on the specifics of terms like "pick my data range"
or "make different graphs."

How are your data organized? In the context of a XY Scatter chart, what
does it mean to "sort by subject?"

example..suppose i have mary, dick and jane. each has test scores from day
1,2,3,5,6. i want to plot x,y of test score against day. each subject will
have their own graph. i can make a graph for mary but i do not want to
cut/copy mary's graph and reenter dick and janes data in the source data
field. i would like to make many graphs with the x,y data while sorting for
subject (dick, jane..etc.) i have many graphs formany subjects. i want to
"globaly" make graphs based on sorted selection criteria.
