Why is it that everytime I try to create a remote job using SOON it
schedules the AT job by default to tomorrow's date and not today's.
This is driving me nuts. The only options I can see are how many
seconds of delay to use. Any ideas?

Consider using the GUI for the Task Scheduler. It is accessible
via the Control Panel.
